Je nach Region und Tradition der Schnittführung bei der Zerlegung der Tiere bei der Fleischherstellung weicht das Verständnis bzw. die Verkehrsauffassung voneinander ab. Auch wird es teilweise als Entrecôte bezeichnet, wenn man den französischen Begriff dafür verwenden will.
