Ein Gradierwerk ist eine Anlage zur Salzgewinnung. Sie besteht aus einem Holzgerüst, das mit Reisigbündeln verfüllt ist. Das Verb ?gradieren? bedeutet ?einen Stoff in einem Medium konzentrieren?. Im Falle eines Gradierwerks wird der Salzgehalt im Wasser erhöht, indem Sole durch das Reisig hindurchgeleitet wird, wobei auf natürliche Weise Wasser verdunstet. Außerdem lagern sich Verunreinigungen der Sole an den Dornen ab; dadurch wird die Qualität des erzeugten Salzes erhöht.
