Einkochen, Einmachen, Eindünsten ist eine physikalische Methode, Lebensmittel durch Erhitzen und Luftabschluss zu konservieren, beim Einkochen wird das zu konservierende Gut gekocht und heiß abgefüllt, beim Eindunsten werden fertig abgefüllte Flaschen oder Gläser in Wasser eingestellt ?im Dunst? gekocht. Das Einmachen ist als Konservierungsmethode aufgrund der niedrigeren maximal erreichbaren Temperatur während des Konservierungsvorganges zwar nicht so sicher wie das Haltbarmachen des Inhaltes von zum Beispiel Konservendosen in einem Autoklaven, kann dafür aber auch unter den Bedingungen eines Privathaushalts praktisch ausgeführt werden.
